Ravioli Directions
- 1
Make the Dough
In a large bowl, combine the flour and salt. Make a well in the center and crack in the eggs. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.
- 2
Prepare the Filling
In a mixing bowl, combine ricotta cheese, grated Romano cheese, grated Parmesan cheese, black pepper, and salt. Mix well until smooth and creamy.
- 3
Roll Out the Dough
Divide the dough into four portions. Roll out one portion at a time to about 1/16 inch thickness using a pasta machine or a rolling pin. Keep the remaining dough covered to prevent drying out.
- 4
Form the Ravioli
Place small spoonfuls of filling about 2 inches apart on one sheet of rolled dough. Moisten the edges with water, then fold the dough over the filling to form pockets. Press firmly to seal, then cut out the ravioli with a knife or a ravioli cutter.
- 5
Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully drop in the ravioli and cook for about 4-5 minutes until they float to the surface. Remove with a slotted spoon.
- 6
Serve with Marinara Sauce
Heat the tomato marinara sauce in a saucepan. Serve the cooked ravioli topped with marinara sauce and additional grated Parmesan cheese if desired.
