Prepare the Base
In a large skillet or saucepan, heat the olive oil over medium heat. Add the finely chopped onion, carrot, and celery. Sauté until the vegetables are soft and translucent, about 5-7 minutes.

Add the Meats
Increase the heat to medium-high and add the ground veal, pork, and beef to the skillet. Cook until browned, breaking up the meat with a spoon, about 8-10 minutes.

Incorporate Aromatics
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add Tomatoes and Wine
Pour in the crushed tomatoes, tomato paste, and red wine. Stir to combine.

Simmer the Sauce
Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for about 30 minutes, stirring occasionally.

Finish with Milk
Stir in the milk and let it cook for another 10-15 minutes. Season with salt and black pepper to taste.

Serve
Serve the Bolognese sauce hot over your choice of pasta, and garnish with fresh basil and grated Parmesan cheese.
