Catfish Preparation

    Rub the Chesapeake catfish fillets with Cajun seasoning evenly, ensuring they are well coated on all sides.

    Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned catfish fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. If you prefer blackened catfish, cook for an additional minute on each side to achieve a charred effect.

Cajun Mayo

    Prepare the Cajun Mayo

    In a small bowl, combine mayonnaise, Cajun seasoning, and lemon juice. Mix well until all ingredients are fully incorporated. Taste and adjust seasoning, if necessary.

Sandwich Assembly

    Lightly toast the sourdough bread slices until golden brown.

    While the bread is toasting, slice the large tomato into thin rounds.
