Preparing the Fish

    Make the Batter

    In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer to the dry ingredients, stirring until a smooth batter forms. Let it rest for about 15 minutes.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

    Batter and Fry the Fish

    Dip each catfish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Cut the Potatoes

    Peel and cut the russet potatoes into fries. Rinse them in cold water to remove excess starch, then pat dry with a towel.

    Fry the potatoes in batches, without overcrowding, for about 5-7 minutes until golden and crisp. Remove and drain on paper towels, seasoning with salt immediately.

Making the Dill Tartar Sauce

    In a small bowl, mix together the mayonnaise, chopped dill pickles, fresh dill, lemon juice, salt, and black pepper. Adjust seasoning to taste.
