Preparation

    Clean the Clams

    Place the clams in a bowl of cold water and let them soak for about 30 minutes to help remove sand and grit. Rinse them under cold water and set aside.

    Prepare the Chorizo and Vegetables

    Slice the chorizo into thin rounds. Finely chop the shallots, garlic, and fennel bulb.

Cooking

    Cook the Chorizo

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced chorizo and cook for about 5 minutes, until it is browned and has released its oils.

    Sauté the Vegetables

    Add the chopped shallots, garlic, and fennel to the pot. Sauté for another 3-4 minutes until the vegetables are soft and fragrant.

    Add Wine and Tomatoes

    Pour in the dry white wine and add the canned diced tomatoes. Bring the mixture to a simmer, scraping the bottom of the pot to deglaze any flavorful bits.

    Steam the Clams

    Add the cleaned clams to the pot, cover with a lid, and let them steam for about 5-7 minutes, or until the clams have opened. Discard any clams that do not open.

    Season and Serve

    Season the broth with salt and black pepper to taste. Stir in chopped fresh parsley before serving. Ladle the clams and broth into bowls and enjoy!
