Arugula-Chimichurri

    Prepare the Steak

    Season the prime flat iron steak with salt and black pepper on both sides.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and cook for 4-5 minutes on each side for medium-rare, adjusting time for preferred doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Truffle Fries

    Prepare the Potatoes

    Wash and cut the russet potatoes into thin strips (about 1/4 inch thick).

    Fry the Potatoes

    Heat vegetable oil in a deep pot until it reaches 350°F (175°C). Carefully add the potato strips in batches and fry for 4-5 minutes until golden and crispy. Remove and drain on paper towels.

    Season the Fries

    Drizzle the hot fries with truffle oil and sprinkle with salt. Toss to coat evenly.

Arugula-Chimichurri

    Prepare the Chimichurri

    In a food processor, combine arugula, parsley, garlic, red wine vinegar, olive oil, salt, and black pepper. Blend until well combined but still slightly chunky.

    Serve the Chimichurri

    Spoon the chimichurri over the sliced steak just before serving.
