    Clean the Mussels

    Rinse the mussels under cold water and scrub the shells to remove any dirt or debris. Remove the beards (the fibrous threads sticking out) by pulling them towards the hinge of the shell.

    Chop Aromatics

    Finely chop the shallots, mince the garlic, and chop the parsley and thyme.

    Sauté Aromatics

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped shallots and sauté for 2-3 minutes until they become translucent. Add minced garlic and continue to sauté for another minute until fragrant.

    Pour in 1 cup of dry white wine and 1 cup of fish stock. Bring the mixture to a simmer.

    Add the cleaned mussels to the pot and cover. Cook for about 5-7 minutes until the mussels have opened up. Discard any mussels that remain closed.

    Stir in 1 cup of heavy cream, 1 tablespoon of fresh thyme, salt, black pepper, and red pepper flakes. Cook for an additional 2-3 minutes until heated through.
