Cook the Pasta
In a large pot, bring water to a boil. Add 2 cups of macaroni pasta and 1 tsp of salt. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Prepare the Potato
Peel and dice the medium potato into small cubes. Boil the potato cubes in salted water until tender, about 10 minutes. Drain and set aside.

Cook the Bacon
In a large skillet over medium heat, cook the 4 slices of bacon until crispy. Remove the bacon from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into smaller pieces.

Chop Green Onions
Chop the 2 stalks of green onion, separating the green and white parts.

Combine Ingredients
In the same skillet with the bacon drippings, add the cooked macaroni, boiled potato cubes, and crumbled bacon. Stir well to combine.

Add Cheese and Crema
Reduce heat to low. Add 1 cup of shredded cheddar cheese and 1 cup of crema to the skillet. Mix until the cheese is melted and everything is well combined.

Add 1 tsp of black pepper and adjust salt to taste. Stir well to ensure even seasoning.
