Method
Preparing the Fries
- 1
Fry the Fries
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Once hot, add frozen French fries in batches, ensuring not to crowd the fryer. Fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt to taste.
Making the Crab Topping
- 2
Mix Crab Ingredients
In a mixing bowl, combine the lump blue crab meat, Cajun seasoning, and lemon juice. Gently fold to incorporate, being careful not to break up the crab meat too much.
Preparing Cajun Mayo
- 3
Make the Cajun Mayo
In a small bowl, combine the mayonnaise, Cajun seasoning, garlic powder, and lemon juice. Mix well until fully combined. Adjust seasoning to taste.
Assembling the Loaded Crab Fries
- 4
Combine and Serve
On a large serving platter, spread the crispy fries evenly. Top with the crab mixture, making sure to distribute it evenly across the fries. Drizzle the prepared Cajun mayo over the top and garnish with chopped scallions. Serve immediately.
