Potato Preparation

    Prepare the Potatoes

    Wash the Russet potatoes thoroughly under cold water to remove any dirt. Cut each potato into 1/4-inch thick strips to create fries.

    Soak the Potatoes

    Place the cut potatoes in a large bowl filled with cold water. Let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Frying

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove any excess moisture.

    Fry the Potatoes

    Carefully add a batch of potatoes to the hot oil. Do not overcrowd the pot. Fry for about 5-7 minutes or until they turn golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with house seasoning and Old Bay seasoning while they are still hot.
