Soak Calamari
In a medium bowl, combine the calamari rings and buttermilk. Allow the calamari to soak in the buttermilk for at least 30 minutes to tenderize.

Prepare Dry Mixture
In another bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper until well combined.

Heat Oil
In a large, deep skillet or fryer, pour in the vegetable oil and heat over medium-high heat until it reaches 375°F (190°C). You can test the oil by dropping a small amount of the flour mixture into it; it should sizzle immediately.

Remove the calamari from the buttermilk and allow any excess liquid to drip off. Dredge the calamari rings in the flour mixture, making sure they are evenly coated.

Carefully place the coated calamari rings into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 1-2 minutes or until they are golden brown and crispy.
