Prepare the Calamari
In a large bowl, combine the cleaned and sliced calamari with salt, black pepper, and paprika. Toss to coat evenly.

Prepare the Breading
In another bowl, mix the all-purpose flour and cornstarch. This will be used to coat the calamari.

Heat the Oil
In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Bread the Calamari
Take the seasoned calamari pieces and dredge them in the flour and cornstarch mixture, ensuring they are evenly coated.

Fry the Calamari
Carefully place the breaded calamari into the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve
Serve the flash-fried calamari hot with the roasted long hot aioli on the side.
For the Roasted Long Hot Aioli

Roast the Peppers
Preheat your oven to 400°F (200°C). Place the long hot peppers on a baking sheet and roast in the oven for about 15-20 minutes, or until the skins are blistered and slightly charred. Remove from the oven and let cool.

Prepare the Aioli
Once the peppers have cooled, remove the stems and seeds. In a food processor, combine the roasted long hot peppers, minced garlic, mayonnaise, lemon juice, salt, and black pepper. Blend until smooth.

Taste and Adjust
Taste the aioli and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to suit your preference.

Transfer the roasted long hot aioli to a serving bowl and serve alongside the flash-fried calamari.
