Fried Shrimp Preparation

Marinate Shrimp
In a bowl, combine the large shrimp and buttermilk. Cover and refrigerate for at least 30 minutes to allow the shrimp to marinate.

Prepare Dry Mixture
In a separate bowl, mix together the all-purpose flour, cornstarch, cayenne pepper, salt, and black pepper until well combined.

Heat Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat Shrimp
Remove the shrimp from the buttermilk marinade, allowing excess liquid to drip off. Dredge each shrimp in the dry mixture, ensuring they are fully coated.

Fry Shrimp
Carefully add the coated shrimp to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the shrimp and place them on a plate lined with paper towels to absorb excess oil.

Mix Aioli Ingredients
In a mixing bowl, combine the mayonnaise, Sriracha sauce, lemon juice, minced garlic, and salt. Stir until the mixture is smooth and well combined.

Taste the aioli and adjust the salt or Sriracha sauce according to your preference for spiciness.
