Brining the Chicken Wings

    Prepare the Brine

    In a large pot, combine 4 cups of water, 1 cup of kosher salt, and 1 cup of brown sugar. Stir until the salt and sugar are fully dissolved.

    Add the crushed garlic cloves, black peppercorns, and bay leaves to the brine. Bring the mixture to a boil, then remove from heat and let it cool to room temperature.

    Brine the Wings

    Place the chicken wings in a large resealable plastic bag or container. Pour the cooled brine over the wings, ensuring they are fully submerged. Seal the bag or container and refrigerate for at least 4 hours, preferably overnight.

Cooking the Wings

    Preheat the Oven

    Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.

    Dry the Wings

    Remove the wings from the brine and pat them dry with paper towels. This helps achieve maximum crispiness.

    Arrange the wings in a single layer on the wire rack. Bake in the preheated oven for 40-45 minutes, turning halfway through, until they are golden and crispy.

Saucing the Wings

    Toss in Sauce

    Once the wings are cooked, toss them in your choice of sauce: buffalo sauce, firecracker sauce, or honey-hoisin sauce. For a different flavor, sprinkle Old Bay seasoning directly on the wings.
