Slice the Onion
Thinly slice the medium onion and set aside.
Cooking the Onions

Fry the Onions
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for about 10-12 minutes, stirring occasionally, until the onions are caramelized and golden brown. Remove from skillet and set aside.

Cook the Ribeye
In the same skillet, add another tablespoon of olive oil. Increase the heat to medium-high. Add the shaved ribeye to the skillet, season with salt and black pepper, and cook for about 5-7 minutes until browned and cooked through.

Assembling the Sandwich

Prepare the Hoagie Rolls
While the cheese is melting, cut the hoagie rolls lengthwise without cutting all the way through. If desired, you can toast the rolls on a separate skillet or in the oven.

Fill the Rolls
Once the cheese has melted, scoop the cheesesteak mixture into the hoagie rolls. Drizzle sriracha ketchup over the filling, to taste.

Serve the cheesesteaks hot, with additional sriracha ketchup on the side if desired.
