Method
Preparation
- 1
Prepare the Pears
Preheat your oven to 400°F (200°C). Slice the pears in half and remove the cores using a melon baller or spoon.
- 2
Roast the Pears
Place the pear halves on a baking sheet, cut side up. Drizzle with olive oil and sprinkle with black pepper. Roast in the oven for about 25-30 minutes or until tender and caramelized.
- 3
Prepare the Walnut-Ginger Crumble
While the pears are roasting, chop the walnuts and mix them in a bowl with the grated ginger. Add a pinch of lava sea salt and set aside.
Assembly
- 4
Plate the Dish
Once the pears are roasted, remove them from the oven and let them cool slightly. On a serving platter, arrange the arugula as a bed for the pears.
- 5
Add the Burrata
Place the burrata cheese in the center of the arugula, gently tearing it open to expose the creamy interior.
- 6
Add the Prosciutto
Tear the prosciutto into smaller pieces and drape them over the burrata.
- 7
Top with the Caramelized Pears
Place the roasted pear halves on top of the prosciutto and burrata.
- 8
Finish with Toppings
Sprinkle the walnut-ginger crumble over the pears and drizzle with mugolio. Finish with a sprinkle of lava sea salt to taste.
