Method
Preparing the Salad Base
- 1
Wash and Chop Romaine
Thoroughly wash the romaine hearts under cold water to remove any dirt. Pat dry with a paper towel. Cut the romaine into bite-sized pieces and place in a large salad bowl.
Making the Croutons
- 2
Prepare the Bread
Preheat your oven to 375°F (190°C). Cut the bread into small cubes, about 1 inch in size. In a large bowl, combine the bread cubes, olive oil, garlic powder, and salt. Toss until the bread pieces are evenly coated.
- 3
Bake the Croutons
Spread the coated bread cubes in a single layer on a baking sheet. Bake in the preheated oven for 15-20 minutes, or until the croutons are golden brown and crispy, stirring halfway through. Remove from the oven and let cool.
- 4
Add Parmesan to Croutons
Once the croutons have cooled, toss them with the shredded Parmesan cheese for added flavor.
Making the Dressing
- 5
Combine Ingredients
In a mixing bowl, combine the minced garlic, anchovy paste, Dijon mustard, Worcestershire sauce, and lemon juice. Whisk together until smooth.
- 6
Add Olive Oil
Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing. Season with salt and black pepper to taste.
- 7
Finish with Parmesan
Stir in the grated Parmesan cheese until well incorporated.
Assembling the Salad
- 8
Combine Ingredients
In the large bowl with the chopped romaine, add the croutons and drizzle the dressing over the top.
- 9
Toss the Salad
Toss everything together until the lettuce is well coated with the dressing. Serve immediately.
