    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Pancetta

    While the pasta is cooking, dice the pancetta (or guanciale) into small pieces. In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Making the Sauce

    Mix the Sauce Ingredients

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and a pinch of salt until well combined. This will create a creamy sauce when mixed with the pasta.

    Combine Pasta and Pancetta

    Once the spaghetti is drained, add it directly to the skillet with the cooked pancetta. Mix well to combine and coat the spaghetti with the pancetta fat.

    Add the Sauce

    Remove the skillet from heat and quickly pour the egg and cheese mixture over the hot pasta. Toss vigorously to combine, adding reserved pasta water a little at a time to achieve a creamy consistency. Avoid scrambling the eggs.

Serving

    Plate the Dish

    Once the sauce is well integrated and creamy, serve immediately. Garnish with freshly chopped parsley and additional grated Parmesan cheese, if desired.
