Spaghetti Bolognese

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain and set aside, reserving some pasta water.

Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.

Brown the Meat
Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon, about 7-10 minutes.

Add Garlic and Tomatoes
Stir in the minced garlic and cook for 1 minute. Then add the crushed tomatoes, tomato paste, beef stock, dried oregano, salt, and black pepper. Bring to a simmer.

Simmer
Reduce heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally. Adjust seasoning with salt and pepper.

Combine with Spaghetti
Add the drained spaghetti to the sauce and mix well. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

Prepare the Slaw
In a large bowl, combine the shaved brussels sprouts, julienned apple, and grated carrot.

Make the Dressing
In a small bowl, mix together the apple cider vinegar, honey, olive oil, salt, and black pepper.

Combine and Toss
Pour the dressing over the slaw mixture and toss well to combine. Adjust seasoning to taste and let it sit for at least 10 minutes before serving to allow the flavors to meld.
