    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin powder over cold water and let it sit for about 5-10 minutes until it blooms.

    Heat the Cream Mixture

    In a saucepan, combine heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar dissolves and the mixture is heated through, but do not let it boil.

    Add Vanilla and Gelatin

    Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin until fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Refrigerate for at least 4 hours, or until set.

Berry Sauce

    Prepare the Berries

    In a medium saucepan, combine mixed berries, granulated sugar, and lemon juice. Stir gently to combine.

    Cook the Sauce

    Cook over medium heat for about 10-15 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.

    Cool the Sauce

    Remove from heat and let the sauce cool to room temperature. You can blend it for a smoother texture if desired.

    Serve

    Once the panna cotta has set, unmold it if desired and drizzle the berry sauce over the top before serving.
