For the Lobster Puffs

    Prepare the Filling

    In a mixing bowl, combine the cooked and chopped lobster meat, softened cream cheese, chopped fresh dill, lemon zest, egg yolk, salt, and black pepper. Mix until well combined and set aside.

    Prepare Puff Pastry

    Preheat the oven to 400°F (200°C). Roll out the thawed puff pastry on a lightly floured surface to a thickness of about 1/8 inch. Cut the pastry into squares or circles, about 3 inches in size.

    Fill the Pastry

    Place a spoonful of the lobster filling in the center of each pastry square or circle. Fold over the pastry to enclose the filling and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.

    Bake the Puffs

    Arrange the filled pastry on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.

    In a bowl, whisk together the mayonnaise, Dijon mustard, chopped capers, fresh lemon juice, and hot sauce until smooth and well combined. Season with salt and black pepper to taste. Refrigerate until ready to serve.
