Method

Preparation

  1. 1

    Prepare the Peach Puree

In a blender, combine 2 cups of ripe peaches (peeled and pitted) with a bit of water. Blend until smooth to create the peach puree.

  2. 2

    Preheat the Oven

Preheat your oven to 350°F (175°C) to prepare for baking.

  3. 3

    Prepare Baking Dish

Grease a 9x13 inch baking dish with butter or non-stick spray to prevent sticking.

Mixing Ingredients

  1. 4

    Mix Dry Ingredients

In a large bowl, whisk together 1 cup of all-purpose flour, 1 cup of granulated sugar, 2 tsp of baking powder, and 1 tsp of salt until well combined.

  2. 5

    Combine Wet Ingredients

In another bowl, whisk together 1 cup of milk, 2 large eggs, and melted butter (1 stick).

  3. 6

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the peach puree gently.

Baking

  1. 7

    Bake the Peach Mixture

Pour the batter into the prepared baking dish and smooth the top. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  2. 8

    Prepare the Topping

While the base is baking, slice 2 large fresh peaches and toss them with 1 tbsp of brown sugar and 1 tsp of cinnamon in a bowl.

Finishing Touches

  1. 9

    Serve

Once the peach base is done baking, remove from the oven and let cool slightly. Top with the cinnamon-sugar peaches and serve warm with a scoop of vanilla ice cream.
