Roasted Garlic Oil & Herbs

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let sit for about 5-10 minutes until frothy.

    Mix Ingredients

    In a large mixing bowl, combine flour and salt. Create a well in the center, and pour in the activated yeast mixture and olive oil.

    Knead Dough

    Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape and Second Rise

    Punch down the risen dough, shape it into a loaf, and place it in a greased loaf pan. Cover and let rise again for 30-45 minutes.

    Bake

    Preheat the oven to 375°F (190°C). Bake the bread for 30-35 minutes or until golden brown and sounds hollow when tapped.

    Cool

    Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Roasted Garlic Oil & Herbs

    Prepare Garlic

    Preheat the oven to 400°F (200°C). Place whole garlic cloves in a small baking dish and drizzle with 2 tablespoons of olive oil. Cover with foil.

    Roast Garlic

    Roast in the preheated oven for 30-35 minutes, or until the cloves are soft and caramelized. Remove from oven and let cool.

    Make Garlic Oil

    In a small bowl, mash the roasted garlic cloves and mix with 0.5 cups of olive oil, fresh rosemary, thyme, salt, and black pepper. Stir well to combine.

    Serve

    Drizzle the roasted garlic oil over fresh bread slices just before serving.
