Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.

  2. 2

    Dredge the Chicken

Set up a dredging station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each chicken breast into the flour, shaking off excess, then into the eggs, and finally coat with breadcrumbs.

  3. 3

    Cook the Chicken

In a large skillet, heat olive oil over medium-high heat. Cook the breaded chicken breasts for about 4-5 minutes on each side until golden brown. Transfer to a paper towel-lined plate.

Sauce Preparation

  1. 4

    Make the Sauce

In the same skillet, add 2 tablespoons of olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the crushed tomatoes, oregano, basil, sugar, salt, and black pepper. Stir to combine and let simmer for 10-15 minutes.

Assembly and Baking

  1. 5

    Assemble the Dish

In a baking dish, spread a layer of the tomato sauce at the bottom. Place the browned chicken breasts on top. Spoon more sauce over each piece of chicken.

  2. 6

    Add the Cheese

Sprinkle shredded mozzarella and grated Parmesan cheese on top of the chicken and sauce.

  3. 7

    Bake

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

  4. 8

    Garnish and Serve

Remove from the oven, garnish with fresh basil leaves, and serve hot with pasta or a side salad.
