Preparation

  1. 1

    Prepare the Steak

Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes before cooking. Pat them dry with paper towels.

  2. 2

    Season the Steaks

Generously season both sides of the steaks with salt and black pepper.

Cooking

  1. 3

    Heat the Grill or Pan

Preheat a grill or cast-iron skillet over high heat for about 5 minutes until it is very hot.

  2. 4

    Cook the Steak

Add 2 tablespoons of olive oil to the skillet or brush it on the grill. Place the seasoned steaks on the hot surface. Cook for about 4-5 minutes on each side for medium-rare, or until the desired doneness is achieved.

  3. 5

    Add Herbs and Garlic

During the last minute of cooking, add the rosemary sprigs and crushed garlic cloves to the pan for flavor. Spoon some of the melted fat over the steaks for added richness.

Finishing

  1. 6

    Rest the Steaks

Remove the steaks from the heat and let them rest for about 5-10 minutes before slicing.

  2. 7

    Prepare the Sides

While the steaks are resting, grill or roast the asparagus and potatoes until tender and golden brown.

  3. 8

    Serve

Slice the steaks against the grain, drizzle with fresh lemon juice, and serve with the grilled asparagus and roasted potatoes.
