Vegetables

Method

Prep

  1. 1

    Wash and trim

Rinse all vegetables under cold running water. Trim broccoli into uniform florets. Peel and slice carrots into 1/4" coins. Slice zucchini into 1/4" rounds or lengthwise strips. Trim ends of sugar snap peas and remove any strings. Cut cauliflower into small, even florets.

  2. 2

Pat vegetables dry with a clean kitchen towel or paper towel and set aside in a single layer on a cutting board so pieces are roughly similar in size for even cooking.

Steaming

  1. 3

    Prepare steamer

Add 1 cup water or vegetable broth to a medium saucepan. Place a steamer basket or an insert in the pan so the water does not touch the basket bottom. Bring the liquid to a gentle boil over medium-high heat.

  2. 4

    Arrange vegetables

Place vegetables in the steamer basket in layers, putting denser vegetables that need slightly more time (carrots, cauliflower, broccoli) on the bottom and more delicate vegetables (zucchini, peas) on top. Leave some space for steam to circulate.

  3. 5

    Steam to tenderness

Cover the saucepan with a tight-fitting lid. Steam for 4 minutes, then check the carrots and broccoli for tenderness with a fork. Continue steaming for an additional 2–4 minutes as needed: total steaming time should be about 6–8 minutes for crisp-tender vegetables. For softer vegetables, steam up to 10 minutes. Avoid over-steaming to keep color and texture.

  4. 6

When vegetables are at desired tenderness, remove the steamer basket carefully and immediately transfer vegetables to a warmed bowl to prevent further cooking from residual steam.

Seasoning & Serve

  1. 7

    Finish and season

While vegetables are hot, add 2 tablespoons unsalted butter (or olive oil for a vegan option) and 1 tablespoon fresh lemon juice. Sprinkle 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper evenly over the vegetables. Toss gently with tongs or two spoons to coat.

  2. 8

Taste and adjust: add a pinch more salt or lemon if needed. If using, sprinkle 2 tablespoons chopped fresh parsley and 1 tablespoon toasted sesame seeds or sliced almonds for texture.

  3. 9

Serve immediately as a side dish, family-style in a warmed serving bowl. Leftovers can be refrigerated in an airtight container for up to 3 days; reheat gently to avoid overcooking.
