In a small saucepan, combine 1 cup water and 1 cup granulated sugar. Heat over medium, stirring until sugar dissolves. Bring to a gentle simmer for 1 minute, then remove from heat and let cool to room temperature. (If using honey or agave, skip heating: dissolve 2 tablespoons into the base water.)

In a large pitcher, combine the remaining 7 cups cold water, the cooled simple syrup (or honey/agave), and 1/2 cup fresh lime juice. Stir to combine. This is your neutral agua base to adapt to different fruits and seasons.
Strawberry Agua Fresca (Spring/Summer)

Place 2 cups hulled strawberries and 1 cup cold water in a blender and pulse until smooth (about 30–45 seconds).

Strain the strawberry puree through a fine-mesh sieve into the pitcher with the base to remove seeds and brighten the texture, pressing solids with a spatula. Discard solids.

Cucumber-Lime Agua Fresca (Summer)
