Base
1. Make simple syrup
In a small saucepan, combine 1 cup water and 1 cup granulated sugar. Heat over medium, stirring until sugar dissolves. Bring to a gentle simmer for 1 minute, then remove from heat and let cool to room temperature. (If using honey or agave, skip heating: dissolve 2 tablespoons into the base water.)
2. In a large pitcher, combine the remaining 7 cups cold water, the cooled simple syrup (or honey/agave), and 1/2 cup fresh lime juice. Stir to combine. This is your neutral agua base to adapt to different fruits and seasons.
Strawberry Agua Fresca (Spring/Summer)
3. Place 2 cups hulled strawberries and 1 cup cold water in a blender and pulse until smooth (about 30–45 seconds).
4. Strain the strawberry puree through a fine-mesh sieve into the pitcher with the base to remove seeds and brighten the texture, pressing solids with a spatula. Discard solids.
5. Taste and adjust sweetness with more simple syrup or lime juice if needed. Chill for at least 30 minutes. Serve over ice, garnished with mint leaves.
Cucumber-Lime Agua Fresca (Summer)
6. Blend 1 cup chopped cucumber with 1/2 cup of the base water until smooth (about 30 seconds).
7. Strain through a fine sieve into the pitcher to remove pulp for a silky texture. Add optional chopped cilantro or mint and lime slices to the pitcher; lightly muddle the herbs with a spoon to release aroma.
8. Chill 20–30 minutes and serve over ice with a lime slice rim.
Watermelon-Basil Agua Fresca (Mid/Late Summer)
9. Blend 3 cups seedless watermelon and 8 basil leaves until smooth (about 30 seconds).
10. Strain into the base pitcher to remove any fibrous bits. Taste and add more basil or a splash of lime if desired. Chill and serve over ice, garnish with basil sprig.
Pineapple-Chili Agua Fresca (Tropical)
11. Blend 2 cups chopped pineapple with 1/2 cup base water until smooth. Strain if you prefer a smoother drink.
12. Stir into the base pitcher. To serve, rim glasses with lime and dip in chili powder or Tajín, or sprinkle 1 teaspoon into the pitcher for a gentle heat. Chill and serve over ice.
Apple-Cinnamon Agua Fresca (Fall)
13. Blend 2 cups chopped apple with 1/2 cup base water and 1/2 teaspoon ground cinnamon until smooth (about 30–45 seconds).
14. Strain to remove fibrous bits, then stir into the base. Adjust sweetness with additional simple syrup if apples are tart. Chill and serve over ice; garnish with a cinnamon stick if desired.
Pear-Ginger Agua Fresca (Fall/Winter)
15. Simmer the 1 tablespoon sliced fresh ginger in 1/2 cup water for 5 minutes to make a quick ginger infusion, then cool. Alternatively, blend the ginger with the pear if you want more bite.
16. Blend 2 cups chopped pear with the ginger infusion (or 1/2 cup base water) until smooth. Strain if desired and combine with the base. Chill and serve over ice.
Citrus-Winter Agua Fresca (Winter)
17. Segment and remove seeds from 2 cups mixed citrus. Blend the segments with 1/2 cup base water until smooth.
18. Strain to remove pith and membranes for a cleaner taste. Stir in 2 tablespoons honey or agave if you want a sweeter, rounder winter flavor. Chill and serve over ice or dilute with sparkling water for a festive fizzy version.
Optional Add-ins & Serving
19. For a fizzy agua fresca, replace up to half the base water with 2 cups cold sparkling water just before serving to preserve carbonation.
20. To make cocktails, add about 1 tablespoon spirit per serving (adjust to taste) to each poured glass; stir gently.
21. Always taste before serving and adjust sweetness (simple syrup/honey) and acidity (lime) to balance the fruit. Serve over plenty of ice.
