Mousse Preparation

Melt the Chocolate
In a heatproof bowl, melt the white chocolate over a pot of simmering water, stirring gently until smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

Combine Ingredients
Gently fold the melted white chocolate into the whipped cream until well combined. Then, fold in the beaten egg whites in two additions, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mixture into serving dishes and refrigerate for at least 2 hours until set.

Serve
Serve the mousse chilled, garnished with fresh strawberries and a dollop of homemade whipped cream.
