White Chocolate Crème Brûlée Recipe

    Preparation of the Custard

    Preheat your oven to 325°F (160°C). In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped white chocolate, stirring until melted and smooth.

    Mixing the Egg Yolks

    In a mixing bowl, whisk together the egg yolks, 1 tablespoon of sugar, vanilla extract, and a pinch of salt until well combined.

    Combining Mixtures

    Gradually pour the warm white chocolate cream into the egg yolk mixture, whisking constantly to prevent the eggs from curdling.

    Straining the Mixture

    Pour the custard mixture through a fine sieve into another bowl to ensure a smooth texture.

    Baking the Custards

    Divide the custard mixture evenly among ramekins. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the edges are set but the center is still slightly jiggly.

    Cooling

    Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or overnight.

    Caramelizing the Sugar

    Before serving, sprinkle about 1/2 tablespoon of granulated sugar over each custard. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy layer. Alternatively, you can place them under a broiler for a few minutes, watching closely to avoid burning.
