Preparation Steps

  1. 1

    Prepare the Veal

Season the veal cutlets with salt and black pepper on both sides.

  2. 2

    Bread the Cutlets

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each cutlet in flour, dip in the egg, and finally coat with breadcrumbs, pressing lightly to adhere.

  3. 3

    Fry the Cutlets

In a large skillet, heat olive oil over medium-high heat. Fry the breaded cutlets in batches for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

  4. 4

    Prepare the Arugula Salad

In a bowl, toss arugula with a drizzle of olive oil, salt, and pepper to taste.

  5. 5

    Prepare the Tomato Chutney

Chop Roma tomatoes and mix with a pinch of salt, pepper, and a splash of olive oil in a bowl. Let it sit for flavors to meld.

  6. 6

    Plate the Dish

Serve the veal cutlets on a plate with arugula salad on the side and spoon the tomato chutney over the cutlets.
