    Prepare the Ingredients

    Start by seasoning the veal medallions with salt and black pepper. Chop the onions, roasted red peppers, and garlic. Set aside.

    Cook the Italian Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon, and cook until browned. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the chopped onions and roasted garlic, cooking until the onions are translucent. Stir in the roasted red peppers.

    Cook the Veal

    Add the veal medallions to the skillet, cooking for about 3-4 minutes on each side until browned and cooked through. Return the cooked sausage to the skillet.

    Make the Marsala Sauce

    Pour in the Marsala wine, scraping the bottom of the skillet to deglaze. Let it simmer for 5 minutes until slightly reduced.

    Combine and Serve

    Add the roasted potatoes to the skillet and mix well. Sprinkle mozzarella cheese over the top and cover until melted. Garnish with fresh parsley before serving.
