    Prepare the Filling

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped spinach and pine nuts, cooking until the spinach has wilted. Season with salt and pepper. Remove from heat and let it cool.

    Prepare the Veal

    Place veal cutlets between two sheets of plastic wrap and gently pound them to about 1/4 inch thickness. Lay a portion of the spinach and pine nut mixture on one end of each cutlet, then roll them tightly and secure with toothpicks.

    Sear the Veal Rolls

    In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Sear the veal rolls on all sides until browned. Remove them from the skillet and set aside.

    Prepare the Sauce

    In the same skillet, add sliced wild mushrooms and diced tomatoes. Cook for about 5 minutes, then lower the heat and add heavy cream. Stir in the crumbled gorgonzola cheese until melted and smooth. Season with salt and pepper to taste.

    Combine and Serve

    Return the veal rolls to the skillet with the sauce, cooking gently for an additional 5-7 minutes until heated through. Serve hot, garnished with chopped fresh parsley.
