Prepare the Tilapia
Season the tilapia fillets with salt and black pepper on both sides.

Grill the Tilapia
Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Grill the tilapia fillets for about 4-5 minutes on each side or until cooked through and flaky. Remove and set aside.

Caramelize the Onions
In the same pan, add the remaining tablespoon of olive oil. Add the sliced onions and cook on medium heat until they are caramelized, about 8-10 minutes.

Add Tomatoes and Capers
Add the diced roma tomatoes and capers to the caramelized onions. Cook for an additional 2-3 minutes until the tomatoes are softened.

Create the Sauce
Pour in the white wine and lemon juice. Bring to a simmer and cook for about 5 minutes until reduced slightly.

Finish with Herbs
Stir in the chopped parsley and basil. Adjust salt and pepper to taste.

Serve
Plate the grilled tilapia and spoon the tomato, onion, and caper sauce over the top. Serve immediately.
