Prepare the Ingredients
Slice the onions and chop the roasted red peppers. Peel the roasted garlic and set aside.

Cook the Sausage
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage links and cook until browned and cooked through, about 10-12 minutes. Remove from the skillet and set aside.

Caramelize the Onions
In the same skillet, add another tablespoon of olive oil. Add the sliced onions and cook over medium-low heat until caramelized, about 15 minutes. Stir occasionally to prevent burning.

Prepare the Veal
Season the veal medallions with salt and black pepper. In the same skillet, add the veal and sear for about 3-4 minutes on each side until golden brown. Remove and set aside.

Make the Sauce
Add the roasted garlic to the skillet, followed by the Marsala wine. Scrape the bottom of the skillet to deglaze and let the sauce simmer for about 5 minutes.

Combine Ingredients
Return the veal and sausage to the skillet, along with the caramelized onions and roasted red peppers. Mix well and let simmer for another 5 minutes, allowing flavors to meld.

Add Cheese and Serve
Top the dish with mozzarella cheese and cover the skillet until the cheese melts. Serve the scalloppine over roasted potatoes and garnish with fresh parsley.
