Prepare the Cutlets
Season the chicken breast, pork, or veal cutlets with salt and pepper on both sides.

Set up Breading Station
Place the flour in one shallow dish, beat the eggs in another dish, and place the panko breadcrumbs in a third dish.

Bread the Cutlets
Dredge each cutlet in flour, shaking off the excess. Dip into the beaten eggs, then coat with panko breadcrumbs, pressing gently to adhere.

Cook the Cutlets
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded cutlets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Arugula
In a large bowl, toss the arugula with lemon juice and a pinch of salt and pepper to taste.

Place a bed of dressed arugula on each plate, top with the crispy cutlets, and spoon tomato chutney over the top.
