Prepare the crust
Preheat the oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and 2 tablespoons of granulated sugar. Mix until well combined and press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and let cool.

Make the filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the remaining granulated sugar and mix until fully incorporated. Add sour cream, vanilla extract, salt, and mix well. Add eggs one at a time, mixing on low speed until just combined. Do not overmix.

Combine and bake
Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for about 60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill and serve
After the cheesecake has cooled, cover it with plastic wrap and refrigerate for at least 4 hours, preferably overnight. Serve chilled, and garnish with fresh berries or fruit if desired.
