Prepare the Crust

Preheat the oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs. Melt the butter and mix it with the cookie crumbs until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let it cool.

Make the Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, mixing until well incorporated. Add the sour cream, vanilla extract, and mix until smooth. Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

Combine and Bake

Pour the cheesecake filling over the cooled Oreo crust. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool and Refrigerate

Remove the cheesecake from the oven and allow it to cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight to set.

Serve

Carefully remove the sides of the springform pan. Slice the cheesecake and serve chilled. Optionally, top with whipped cream or fresh berries.
