Method

Prepare the Mussels

    Clean and Prepare

    Rinse the PEI mussels under cold water, scrubbing the shells with a brush to remove any grit. Remove any beards and discard any mussels that are open or damaged.

    Sauté Garlic

    In a large pot, heat the olive oil over medium heat. Add the minced garlic (4 cloves) and sauté until fragrant, about 1 minute.

    Add Wine and Seasonings

    Pour in the dry white wine and add the red pepper flakes, salt, and black pepper. Bring to a simmer.

    Steam Mussels

    Add the cleaned mussels to the pot. Cover and steam for 5-7 minutes until the mussels have opened. Stir in chopped parsley before serving.

Prepare the Garlic Toast

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Butter Mixture

    In a small bowl, mix softened butter, minced garlic (2 cloves), and chopped parsley (1 tablespoon) until well combined.

    Toast the Bread

    Slice the ciabatta loaf in half and spread the garlic butter mixture generously on both halves. Place on a baking sheet and toast in the oven for 10 minutes or until golden brown.
