1. Prepare the Pomodoro Sauce
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the crushed tomatoes, oregano, and salt. Simmer for about 15 minutes, stirring occasionally. Add chopped basil before serving.
2. Prepare the Mozzarella
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Season the flour with salt and pepper.
3. Bread the Mozzarella
Dip each mozzarella slice in the flour, then in the egg, and finally coat with breadcrumbs. Press gently to ensure the breadcrumbs adhere.
4. Fry the Mozzarella
In a deep skillet or pot, heat the vegetable oil over medium-high heat until hot (about 350°F/175°C). Fry the breaded mozzarella slices in batches until golden brown, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
5. Serve
Serve the mozzarella fritti hot with the pomodoro sauce on the side for dipping.
