    Prepare the Eggplant

    Slice the eggplants lengthwise into thin strips. Sprinkle salt on both sides and let them sit for 30 minutes to draw out excess moisture. Rinse and pat dry.

    Prepare the Batter

    In a shallow bowl, whisk together the eggs and flour until smooth. Add a pinch of salt and pepper to taste.

    Fry the Eggplant

    Heat olive oil in a skillet over medium heat. Dip each eggplant slice in the egg batter, allowing excess to drip off, then fry until golden brown on both sides. Drain on paper towels.

    Make the Filling

    In a bowl, combine ricotta cheese, half of the grated Parmesan cheese, and chopped fresh basil. Mix well and season with salt and pepper.

    Assemble the Rollatini

    Spread a tablespoon of the ricotta filling on each fried eggplant slice. Roll up tightly and place seam side down in a baking dish.

    Add Sauce and Cheese

    Pour the pomodoro sauce over the rollatini, then sprinkle the remaining Parmesan cheese on top.

    Preheat the oven to 375°F (190°C). Bake for 25-30 minutes until bubbly and golden.

    Let cool for a few minutes before serving. Garnish with additional fresh basil if desired.
