    Prepare the Pork Chops

    Preheat the oven to 375°F (190°C). Butterfly the pork chops by cutting them horizontally, being careful not to cut all the way through. Open them like a book.

    Stuff the Chops

    Inside each chop, place 2 slices of Parma Prosciutto and a generous amount of mozzarella cheese. Close the chops and secure with toothpicks.

    Bread the Chops

    Set up a breading station: Place flour in one dish, beaten eggs in another, and breadcrumbs in a third. Dredge each stuffed chop in flour, dip in eggs, and coat with breadcrumbs.

    Sear the Chops

    In a large skillet, heat olive oil over medium-high heat. Sear the breaded pork chops for about 3-4 minutes on each side until golden brown.

    Bake the Chops

    Transfer the seared chops to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).

    Prepare the Demi-Glaze

    In the same skillet, add butter and sliced mushrooms. Sauté until mushrooms are tender. Add sherry wine and stock, scraping up any browned bits. Simmer until reduced by half.

    Remove the toothpicks from the pork chops and serve them hot, drizzled with the sherry mushroom demi-glaze.
