Prepare the Fish
Season the John Dori fillets with salt and black pepper. In a shallow dish, beat the eggs. In another dish, place the all-purpose flour.
Batter the Fish
Dredge each fish fillet in flour, shaking off excess, then dip in the beaten eggs to coat.
Cook the Fish
In a large skillet, heat olive oil over medium heat. Add the battered fish fillets and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
Make the Lemon White Wine Reduction
In the same skillet, add minced garlic and sauté until fragrant. Pour in white wine and lemon juice. Bring to a simmer and reduce for about 5-7 minutes, or until slightly thickened.
Plate the Dish
On a plate, create a bed of sautéed spinach, top with the cooked John Dori fish, and drizzle with the lemon white wine reduction.
