    Poach the Pears

    In a large saucepan, combine the port wine, sugar, cinnamon stick, and vanilla extract. Heat over medium until the sugar dissolves. Add the peeled Bosc pears and simmer for about 20-25 minutes until tender. Remove the pears and let them cool, reserving the poaching liquid.

    Make the Cinnamon Port Drizzle

    Increase the heat to medium-high and reduce the poaching liquid until it thickens slightly, about 10-15 minutes. Remove from heat and let it cool slightly.

    Prepare the Phyllo Raft

    Preheat the oven to 375°F (190°C). Layer the phyllo pastry sheets, brushing each layer with melted butter. Cut the layered phyllo into squares and place them on a baking sheet. Bake for about 10-12 minutes until golden and crispy.

    Assemble the Dish

    On each phyllo raft, place a poached pear. Drizzle with the cinnamon port reduction and serve with a scoop of French Vanilla ice cream on the side.
