In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms. If too sticky, add more flour as needed.

Divide the dough into sections and roll each into a long rope about 1/2 inch thick. Cut into 1-inch pieces and shape each piece with a fork to create ridges.

Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.

Stir in the broccoli florets and cook for an additional 3-4 minutes until tender. Season with salt and black pepper.

Gently toss the cooked gnocchi into the skillet with the chicken and broccoli, ensuring everything is well combined.
