    Prepare the Gnocchi

    Boil the potatoes in salted water until fork-tender. Once cooked, drain and let them cool slightly. Peel the potatoes and mash them in a bowl.

    Mix in the flour, egg, and salt until a soft dough forms. If the dough is too sticky, add a bit more flour. Divide the dough into portions and roll each into a rope about 3/4 inch thick. Cut into 1-inch pieces to form gnocchi.

    Use a fork to press down on each piece to create the characteristic gnocchi shape. Set aside.

    Cook the Chicken and Broccoli

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Cut the chicken into bite-sized chunks, season with salt and black pepper, and add to the skillet. Cook until the chicken is golden brown and cooked through, about 5-7 minutes.

    Add the broccoli florets to the skillet and sauté for an additional 3-4 minutes until the broccoli is tender but still vibrant.

    Cook the Gnocchi

    In a separate pot, bring salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Use a slotted spoon to transfer them to the skillet with the chicken and broccoli.

    Drizzle the remaining olive oil over the mixture and toss gently to combine. Add grated Parmesan cheese and season with additional black pepper to taste. Serve hot.
