Prepare the Shrimp
In a bowl, season the shrimp with salt and black pepper. Dredge each shrimp in all-purpose flour, shaking off any excess.

Batter the Shrimp
Dip the floured shrimp into the beaten eggs, ensuring they are well coated.

Cook the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add the battered shrimp and cook until golden brown on both sides, about 2-3 minutes per side. Remove and set aside.

Sauté Vegetables
In the same skillet, add the wild mushrooms and sauté for 2-3 minutes until softened. Add the chopped spinach and diced tomatoes, cooking until the spinach wilts.

Add Madeira Wine
Pour in the Madeira wine and let it simmer for 2-3 minutes, allowing the alcohol to evaporate slightly.

Add the cooked shrimp back into the skillet, tossing everything together for about 1 minute.

Sprinkle the shredded mozzarella over the shrimp and vegetables. Cover the skillet for a minute until the cheese melts.
