    Prepare the Rack of Lamb

    Preheat your oven to 400°F (200°C). Trim any excess fat from the rack of lamb and French the bones if not already done.

    Marinate

    In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and black pepper. Rub this mixture all over the rack of lamb.

    Sear the Lamb

    Heat a skillet over medium-high heat. Add the rack of lamb, fat side down, and sear for about 3-4 minutes until browned. Turn to sear the other sides for about 2-3 minutes.

    Roast in the Oven

    Transfer the seared rack to a baking dish or roasting pan and place in the preheated oven. Roast for about 15-20 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C).

    Rest and Serve

    Remove the rack of lamb from the oven and let it rest for 5-10 minutes before slicing. Optionally deglaze the skillet with red wine to make a sauce to serve on the side.
