Add Wine and Broth
Pour in the dry white wine and cook for an additional 5 minutes, scraping up any bits from the bottom of the pot. Then add the beef broth, fresh thyme, bay leaf, salt, and black pepper.

Simmer the Soup
Bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes to allow the flavors to meld.

Prepare the Croutons
While the soup is simmering, prepare croutons. Cut bread into cubes, toss with olive oil, salt, and pepper, and bake at 375°F (190°C) for about 10-15 minutes until golden brown.

Serve the Soup
Preheat your oven to broil. Ladle the soup into oven-safe crocks, top each with croutons and a generous layer of Swiss cheese. Place under the broiler for 2-3 minutes until the cheese is melted and bubbly. Serve immediately.
