Prepare the Eggplant
Preheat your oven to 375°F (190°C). Slice the eggplants lengthwise into thin strips, about 1/4 inch thick. Sprinkle with salt and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

Cook the Eggplant
Heat olive oil in a large skillet over medium heat. Grill or sauté the eggplant strips until they are tender and slightly golden, about 3-4 minutes per side. Remove and set aside.

Prepare the Filling
In a mixing bowl, combine ricotta cheese, half of the mozzarella, half of the Parmesan, minced garlic, fresh basil, salt, and pepper. Mix until well combined.

Assemble the Rolatini
Spread a thin layer of marinara sauce on the bottom of a baking dish. Take a slice of eggplant, place a spoonful of the cheese mixture at one end, and roll it up tightly. Place seam side down in the baking dish. Repeat with remaining eggplant and filling.

Top and Bake
Once all rolled, pour the remaining marinara sauce over the top and sprinkle with the remaining mozzarella and Parmesan cheese. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
