    Prepare the Eggplant

    Slice the eggplant into 1/4-inch thick rounds and sprinkle with salt. Let them sit for about 30 minutes to draw out moisture.

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Rinse and Dry Eggplant

    After 30 minutes, rinse the eggplant slices under cold water to remove excess salt, then pat them dry with paper towels.

    Fry Eggplant

    In a skillet, heat olive oil over medium-high heat. Add eggplant slices in batches and fry until golden brown on both sides. Remove and drain on paper towels.

    Layer Ingredients

    In a baking dish, spread a layer of marinara sauce, followed by a layer of fried eggplant, then mozzarella cheese, and a sprinkle of Parmesan cheese. Repeat the layers until all ingredients are used, finishing with marinara sauce and a generous topping of mozzarella and Parmesan.

    Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

    Once baked, remove from the oven and let sit for 10 minutes. Garnish with fresh basil, black pepper, and serve warm.
